Pesto Palmiers

I love recipes that can be used for many different dishes. My Southern Pecan Pesto is one of those recipes that I use in so many ways. I make this pesto as often as I can when basil is plentiful in my herb garden. I know that the cooler weather will soon mean the end of fresh basil until next spring, so I am enjoying it as much as possible.

Here is a great idea for appetizers using pesto, Pesto Palmiers! Using puff pastry, simply spread the pesto on one side of the pastry. Fold the pastry in to create a palmier shape and slice. Place slices on a parchment lined baking tray and place in a 400 degree oven for 10-12 minutes. You can even add some sun-dried tomatoes or chopped prosciutto!
